Quinoa Salad

I’ve been using Hello Fresh for dinners since Sully was born. Let me just say I LOVED this service and it was worth every penny. We would have been eating so much take out had I not signed up for it. For those who are unfamiliar, Hello Fresh is a meal delivery service that sends you ingredients and recipes for three meals a week. In addition to the convenience of not having to plan meals or go to the grocery (a chore that was nearly impossible with Sully during this time), the food was healthy and delicious, AND I learned a lot about cooking. This past week I decided I am finally at a point where I have time to meal plan and going to the grocery with Sully is actually fun for both of us.  So, I canceled Hello Fresh, and I did my own meal planning and shopping.

This Quinoa Corn & Avocado Salad is from the Forks Over Knives app. It was fantastic and incredibly quick and easy to throw together.

Quinoa Corn & Avocado Salad

Ingredients
1 1/2 cups cooked quinoa
1 1/2 cups corn
2 avocados
1 cup cherry tomatoes, halved
1/2 red onion, diced small
1/4 cup fresh cilantro, chopped
1 lime, zested & juiced
sea salt to taste
Optional: I also added some lemon garlic infused olive oil to the mix (I love having this olive oil on hand—it was a gift from a friend that I will be buying more of when I run out!)

Combine everything in a large bowl and mix well.

That’s it! It’s vegan too! If you aren’t vegan, though, you could jazz this up a little more with some feta cheese.
